Matt Amicucci is a leading researcher in the field of fiber structure-function relationships. He is the Co-founder and VP of R&D at one.bio, where he leads the development of novel technologies to transform plant-based fibers into highly bioactive, invisible ingredients for food and beverage applications. Matt has a unique background in both culinary arts and science. After spending over a decade in restaurant kitchens, Matt pursuied his BSc in Food Science and his PhD in Agricultural Chemistry, both at UC Davis.
